I first made this during a hot July afternoon when I didn’t feel like cooking but wanted something refreshing and a little fancy. The sweet, juicy watermelon with salty feta and fresh mint? It’s the kind of flavor combo that surprises you—and then keeps you coming back for more.

This salad is perfect as a light lunch, a clean side dish for BBQs, or a snack that feels totally nourishing and refreshing.

 

Ingredients

  • 4 cups cubed seedless watermelon

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh mint leaves, torn or finely chopped

  • 1 tbsp olive oil

  • 1 tbsp fresh lime or lemon juice

  • Pinch of sea salt

  • Optional: a sprinkle of chili flakes for a little kick

 

Instructions

  1. In a large bowl, gently toss the watermelon, feta, and mint together.

  2. In a small bowl, whisk together the olive oil, lime or lemon juice, and a pinch of salt.

  3. Drizzle the dressing over the salad and toss lightly to combine.

  4. Serve immediately or chill for 15–20 minutes to let the flavors meld. Perfect for picnics or patio dinners!
