Delicate Madeleine Cookies – Light, Buttery & Perfect with Tea

There’s something magical about madeleines.
They’re soft, shell-shaped little sponge cakes — not quite cookies, not quite cake — but oh-so lovely with a warm cup of tea or coffee.

I started making these during one of those cozy “slow down” weekends when I wanted something pretty and comforting without going overboard. These Delicate Madeleine Cookies are lightly sweet, golden on the edges, and soft in the center. And with just a few clean ingredients, you can feel good about enjoying them as an everyday treat.

Perfect for brunches, showers, or that 3 p.m. “I need something sweet” moment. They're as easy to make as they are elegant.

 

🍋 Ingredients (Makes 18–20 madeleines):

  • 2/3 cup white whole wheat flour (or GF blend)

  • 1/2 tsp baking powder

  • Pinch of salt

  • 2 large eggs

  • 1/3 cup maple syrup or honey

  • 1 tsp vanilla extract

  • 1/4 tsp almond extract (optional, but lovely)

  • Zest of 1 lemon (or orange)

  • 6 tbsp unsalted butter or coconut oil, melted and cooled

  • Powdered sugar for dusting (optional)

 

👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C).
    Lightly grease a madeleine pan with butter or coconut oil.

  2. Mix dry ingredients:
    In a small bowl, whisk together flour, baking powder, and salt.

  3. Whip the eggs:
    In a medium bowl, beat eggs and maple syrup with an electric mixer for 4–5 minutes until pale and thick.

  4. Add flavor:
    Gently mix in vanilla, almond extract, and citrus zest.

  5. Fold & finish:
    Sift the flour mixture into the eggs and fold gently until just combined. Stir in melted butter last, mixing gently.

  6. Chill batter:
    Cover and chill the batter in the fridge for 30–60 minutes (this helps the cookies puff beautifully!).

  7. Bake:
    Spoon batter into the madeleine pan (about 3/4 full). Bake for 9–11 minutes or until the edges are golden and the centers spring back when touched.

  8. Cool & serve:
    Cool in pan for 2 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.

 

💡 Sarah’s Tips:

  • No madeleine pan? Try mini muffin tins — just don’t overfill!

  • Want them extra lemony? Add a dash of lemon juice to the batter.

  • Store like a pro: These are best the day of but stay soft in an airtight container for 2–3 days.
