These black bean tacos with avocado crema are proof that simple, plant-based meals can be so satisfying.

I started making these on nights when I didn’t feel like cooking meat but still wanted something flavorful, filling, and fast. The seasoned black beans come together in minutes, and the avocado crema? Creamy, dreamy, and the perfect topping to pull it all together.

Ingredients

For the Black Beans:

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 tsp olive oil

  • 1/2 tsp cumin

  • 1/2 tsp chili powder

  • 1/4 tsp garlic powder

  • Salt and pepper, to taste

For the Avocado Crema:

  • 1 ripe avocado

  • 2 tbsp plain Greek yogurt (or dairy-free alternative)

  • 1 tbsp lime juice

  • 1 tbsp water (to thin, if needed)

  • Salt, to taste

To Serve:

  • 6 small corn tortillas

  • 1/2 cup shredded cabbage or lettuce

  • 1/4 cup diced red onion

  • Fresh cilantro, lime wedges (optional)

 

Instructions

  1. Make the beans: Heat olive oil in a small skillet over medium heat. Add black beans, cumin, chili powder, garlic powder, salt, and pepper. Stir and cook for 4–5 minutes until warmed through and lightly seasoned.

  2. Make the crema: In a blender or food processor, combine avocado, Greek yogurt, lime juice, and a pinch of salt. Blend until smooth. Add a splash of water to thin, if needed.

  3. Warm the tortillas in a dry skillet or microwave.

  4. Assemble the tacos: Fill tortillas with black beans, top with cabbage, red onion, and a generous drizzle of avocado crema. Add cilantro and lime juice if desired.
