This Slow Cooker Tuscan Chicken is one of those recipes that feels fancy enough for a date night but is secretly so easy, it practically makes itself.

I first made this when I was craving something creamy and comforting but still wanted to stay on track with my clean eating habits. With tender shredded chicken, sun-dried tomatoes, spinach, and a light, dairy-free creamy sauce, it checks all the boxes.

It’s high in protein, low in fuss, and full of cozy flavor. Serve it over cauliflower mash, rice, or gluten-free pasta—and don’t forget a spoon to soak up the sauce.

 

Ingredients

  • 1.5–2 lbs boneless, skinless chicken breasts

  • 1/2 cup sun-dried tomatoes (in oil, drained and chopped)

  • 1/2 cup chicken broth

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

  • 1/2 cup plain Greek yogurt or dairy-free coconut cream

  • 2 cups fresh baby spinach

 

Optional to Serve:

  • Brown rice, gluten-free pasta, or mashed cauliflower

  • Chopped fresh parsley or basil for garnish

 

Instructions

  1. Add chicken, sun-dried tomatoes, broth, Italian seasoning, garlic powder, salt, and pepper to the slow cooker.

  2. Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender and easy to shred.

  3. Shred chicken with two forks and stir in Greek yogurt or coconut cream and spinach. Let sit for 5–10 minutes to warm through and wilt the spinach.

  4. Taste and adjust seasoning. Serve warm over your favorite base.
