Skillet Sweet Potato Taco Recipe

30-minute meals clean eating family friendly healthy dinner recipes one-pan meals serves 4 taco recipes vegetarian meals

Taco night is sacred in our house — but some nights, I like to switch things up.
This skillet sweet potato taco recipe is my go-to when I want something hearty, colorful, and meatless — but still crave-worthy enough that no one misses the meat.

The sweet potatoes get perfectly browned and caramelized, the black beans add a plant-based protein boost, and everything comes together in one skillet for a fast, flavor-packed dinner. Add a drizzle of creamy avocado sauce or a sprinkle of cheese, and you've got a dinner that feels comforting and nourishing.

Bonus? It’s naturally gluten-free, budget-friendly, and meal-prep approved.

Ingredients:

  • 2 medium sweet potatoes, peeled and diced

  • 1 tbsp olive oil

  • ½ tsp chili powder

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • 1 can black beans, drained and rinsed

  • ¼ cup red onion, finely diced

  • 1 clove garlic, minced

  • Juice of ½ lime

  • Corn or flour tortillas, warmed

  • Optional toppings: avocado, shredded lettuce, salsa, Greek yogurt, cheese, cilantro

Instructions:

  1. Cook the sweet potatoes
Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes, season with chili powder, cumin, smoked paprika, salt, and pepper. Sauté for about 10–12 minutes, stirring occasionally, until tender and browned.

  2. Add beans and aromatics
Add black beans, red onion, and garlic to the skillet. Stir and cook for another 2–3 minutes until everything is heated through and fragrant.

  3. Finish with lime
Squeeze lime juice over the mixture and toss to combine. Taste and adjust seasoning if needed.

  4. Assemble tacos
Spoon the sweet potato mixture into warm tortillas. Add your favorite toppings like diced avocado, salsa, Greek yogurt, or shredded cheese.

Sarah’s Tips:

  • Make it spicy: Add a pinch of cayenne or hot sauce to the skillet for a kick.

  • Meal prep it: The filling keeps well in the fridge for 3–4 days. Perfect for reheating in tacos, bowls, or over greens.

  • Kid-friendly tip: Let everyone build their own tacos — it’s a fun way to get picky eaters involved.

  • Add crunch: A sprinkle of pumpkin seeds or shredded lettuce on top adds the perfect texture.

Flavorful Conclusion:

This Skillet Sweet Potato Taco Recipe is one of those meals that makes you feel good from the inside out. It’s cozy, satisfying, and packed with flavor — all made in one pan with simple ingredients.
