For the peach salsa:

  • 2 ripe peaches, diced

  • ¼ red onion, finely chopped

  • 1 small jalapeño, seeded and minced (optional)

  • Juice of ½ lime

  • 2 tbsp chopped fresh cilantro

  • Pinch of salt

 

Instructions

  1. Preheat the oven to 400°F. Line a baking dish with parchment or lightly grease it.

  2. Season the pork: Rub the pork tenderloin with olive oil, then sprinkle evenly with garlic powder, paprika, cumin, salt, and pepper.

  3. Sear (optional but adds flavor): Heat a skillet over medium-high heat. Sear pork for 2–3 minutes per side until browned, then transfer to prepared baking dish.

  4. Roast: Bake for 18–22 minutes, or until internal temperature reaches 145°F. Let rest for 5–10 minutes before slicing.

  5. Make the salsa: While the pork cooks, combine diced peaches, red onion, jalapeño, lime juice, cilantro, and a pinch of salt in a bowl. Stir gently and let sit to meld the flavors.

  6. Serve: Slice the pork and spoon the peach salsa over the top. Serve warm.
