This One-Pot Chili Mac is pure comfort food — warm, cheesy, a little spicy, and packed with protein. And the best part? It all comes together in one pot with simple, real ingredients.

I first made this on a cold night when I couldn’t decide between chili and mac and cheese… so I just made both. The result? A family-favorite dinner that’s hearty, satisfying, and surprisingly healthy. It’s high in protein, loaded with fiber, and perfect for weeknights when you just want something filling and fast.

Bonus: cleanup is a breeze.

 

Ingredients

  • 1 tbsp olive oil

  • 1 lb lean ground turkey or ground beef

  • 1/2 yellow onion, chopped

  • 2 cloves garlic, minced

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (15 oz) can diced tomatoes

  • 2 tbsp tomato paste

  • 1 1/2 cups low-sodium chicken or veggie broth

  • 1 1/2 cups whole wheat or gluten-free elbow pasta

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • Salt and pepper, to taste

  • 1/2 cup shredded cheddar cheese (optional, for topping)

  • Optional toppings: chopped cilantro, Greek yogurt, avocado

 

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and garlic and cook for 2–3 minutes until fragrant.

  2. Add ground turkey and cook until browned, breaking it up with a spatula.

  3. Stir in beans, tomatoes, tomato paste, broth, pasta, and seasonings. Bring to a simmer.

  4. Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

  5. Remove from heat and stir in cheese, if using. Let sit for a few minutes before serving.

  6. Top with your favorite extras and enjoy!
