One-Pot Cheesy Southwest Skillet Recipe

30-minute meals clean eating family friendly healthy dinner recipes high protein meals one-pot meals serves 4 tex-mex recipes

This is one of those everyone’s-happy meals — bold flavors, cheesy goodness, and all made in just one pan.
It’s inspired by classic Tex-Mex comfort food but made with clean ingredients you probably already have in your kitchen.

This One-Pot Cheesy Southwest Skillet has ground turkey or beef, black beans, sweet corn, fire-roasted tomatoes, and just enough cheese to make it feel indulgent — but still light enough to keep you feeling good after dinner.

It’s perfect for busy weeknights, meal prep lunches, or even taco night with a twist!

Ingredients:

  • 1 lb ground turkey or lean ground beef

  • 1 tbsp olive oil (if using turkey)

  • 1 bell pepper, chopped

  • 1 small red onion, diced

  • 2 cloves garlic, minced

  • 1 cup corn (fresh, frozen, or canned)

  • 1 can black beans, drained and rinsed

  • 1 (14 oz) can fire-roasted diced tomatoes

  • 1 tsp chili powder

  • ½ tsp cumin

  • Salt and pepper to taste

  • ½ cup shredded cheddar or Mexican blend cheese

  • Optional toppings: avocado, cilantro, salsa, Greek yogurt, lime wedges

Instructions:

  1. Cook the meat and veggies
In a large skillet over medium heat, cook ground turkey or beef with onion and bell pepper. Add a bit of olive oil if needed. Sauté until browned, about 6–8 minutes.

  2. Add flavor and mix-ins
Stir in garlic, corn, black beans, diced tomatoes (with liquid), chili powder, cumin, salt, and pepper. Simmer for 5–7 minutes until heated through and thickened slightly.

  3. Add cheese and melt
Sprinkle cheese over the top. Cover the skillet for 1–2 minutes until cheese is melted and bubbly.

  4. Serve hot
Scoop into bowls and top with avocado, cilantro, or a squeeze of lime. Serve as-is, over rice, or in lettuce wraps!

Sarah’s Tips:

  • Make it low carb: Skip the beans and serve with cauliflower rice.

  • Spice it up: Add jalapeños or a dash of hot sauce.

  • Want more greens? Stir in baby spinach at the end until wilted.

  • Meal prep magic: This reheats beautifully — even better the next day!

Flavorful Conclusion:

This One-Pot Cheesy Southwest Skillet is everything you want in a weeknight dinner — fast, flavorful, filling, and made with real, nourishing ingredients. Whether you're feeding a hungry family or stocking the fridge with leftovers, this recipe is a no-brainer.
