This Crockpot Caprese Stuffed Chicken has become a weeknight favorite in our home. It's warm, melty, full of fresh flavor — and yes, it smells like something you'd get from a little Italian café (without spending an hour in the kitchen).

Juicy chicken breasts are stuffed with mozzarella, cherry tomatoes, and fresh basil, then slow-cooked in a tangy balsamic glaze until tender. It’s ridiculously simple but feels a little fancy — the kind of dinner that makes you feel like you’ve got it all together (even if your day was anything but).

 

Ingredients

  • 4 boneless skinless chicken breasts

  • 1 cup shredded or sliced mozzarella cheese

  • 1 cup cherry tomatoes, halved

  • ½ cup fresh basil leaves

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • ½ cup balsamic vinegar

  • 2 tbsp honey

 

Instructions

  1. Slice & Stuff:
    Using a sharp knife, cut a deep pocket in each chicken breast (but don’t cut all the way through). Stuff each pocket with mozzarella, cherry tomatoes, and basil leaves.

  2. Season:
    Brush the outside of the chicken with olive oil, then sprinkle with garlic powder, salt, and pepper.

  3. Slow Cook:
    In a small bowl, whisk together balsamic vinegar and honey. Pour half of the mixture into the bottom of your crockpot. Place the stuffed chicken breasts inside and drizzle the rest of the balsamic mixture over the top.

  4. Cover & Cook:
    Cook on low for 4–5 hours or on high for 2.5–3 hours, until the chicken is fully cooked and tender.

  5. Serve:
    Carefully remove the chicken (it will be very tender), spoon some of the balsamic glaze from the bottom of the crockpot over each piece, and serve warm.

  • Mozzarella Hack: Shredded works just fine, but fresh mozzarella slices give it that melty, creamy bite.

  • Don’t Skip the Basil: If you don’t have fresh, you can use a sprinkle of dried basil — but fresh really makes the flavor pop.

  • Make it a Meal: Serve with roasted veggies, cauliflower mash, or a bed of zucchini noodles to keep things light and satisfying.
