Copycat Chipotle Chicken Bowls

These Copycat Chipotle Chicken Bowls have all the smoky, savory flavor you love—but they’re made with real, simple ingredients right in your own kitchen. I started making these when I was craving something bold and satisfying but wanted to stay on track with my clean eating goals. And now? It’s one of my favorite meal prep dinners ever.

Whether you’re building bowls for the whole family or prepping lunches for the week, this one’s a keeper.

 

Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken thighs or breasts

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp oregano

  • Salt and pepper, to taste

  • Juice of 1/2 lime

For the Bowls:

  • 2 cups cooked brown rice or cauliflower rice

  • 1 cup black beans, rinsed and drained

  • 1 cup corn (fresh or frozen & thawed)

  • 1 cup chopped romaine or baby spinach

  • 1/2 cup pico de gallo or chopped tomatoes

  • 1/4 cup sliced red onion (optional)

  • 1 avocado or guacamole

  • Lime wedges + fresh cilantro for serving

 

Instructions

  1. Season the chicken: In a bowl, mix olive oil, spices, lime juice, salt, and pepper. Coat chicken and marinate for at least 15 minutes (or overnight for deeper flavor).

  2. Cook the chicken: Grill or pan-cook over medium-high heat for 5–6 minutes per side until cooked through. Let rest, then slice or chop.

  3. Assemble the bowls: In each bowl, layer brown rice, beans, corn, lettuce, pico de gallo, onion, avocado, and grilled chicken.

  4. Top with lime juice, cilantro, or your favorite clean dressing or hot sauce.
