Strawberries and Whipped Cream Recipe

4 servings classic gluten-free no-bake strawberry summer under 15 minutes

This was our “treat” growing up when we didn’t have time to bake. My mom would slice fresh strawberries, whip up some cream, and just like that — dessert was served. It felt so special even though it was so simple. Now, I serve it to my own kids when we need something sweet but not heavy, and they light up every time.

 

Ingredients:

  • 1 lb fresh strawberries, hulled and halved or sliced

  • 1–2 tbsp honey or maple syrup (optional, if berries aren’t super sweet)

  • 1 cup heavy cream (or coconut cream for dairy-free)

  • 1–2 tbsp powdered sugar or maple syrup (to taste)

  • ½ tsp vanilla extract

 

Instructions:

  1. Prep the berries:
    Rinse, hull, and slice the strawberries. If needed, toss with a bit of honey or syrup to enhance their sweetness.

  2. Make whipped cream:
    In a cold mixing bowl, beat the heavy cream with sugar and vanilla until soft peaks form. Don’t overbeat!

  3. Serve:
    Spoon strawberries into individual bowls or glasses. Top generously with whipped cream and a sprig of mint or a dusting of cinnamon if you like.

  4. Optional upgrades:
    Layer into parfait glasses with crushed graham crackers or drizzle with dark chocolate for a fancier twist!
