Sheet Pan Chicken Fajitas Recipe

chicken recipes comfort food lightened up easy weeknight dinners family friendly gluten free meal prep friendly sheet pan dinners

You want the easiest dinner on earth? This is it.
One pan, five ingredients, and 25 minutes later — you're a taco queen with zero kitchen chaos.

This recipe is on permanent rotation in my house. My picky eaters love it, my husband loads up his plate like he’s at a fajita bar, and I love that cleanup takes about 30 seconds. No pots, no mess, no stress.

Just toss, bake, and serve. It’s honestly one of the smartest weeknight wins I’ve ever stumbled into.

Why You’ll Love This Dinner

  • 5 ingredients + one pan – That’s it.

  • Fajita flavor without the stovetop mess – No splattering skillets here.

  • Great for picky eaters & customizable – Everyone builds their own.

  • Ready in under 30 minutes – So you can kick your feet up before 8 p.m.

Ingredients You’ll Need

  • 1 lb chicken breast, thinly sliced

  • 1 red + 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 2 tbsp olive oil

  • 1 tbsp taco seasoning

  • Optional toppings: tortillas, lettuce wraps, salsa, avocado, sour cream

How to Make Sheet Pan Chicken Fajitas

Step 1:
Preheat your oven to 425°F.

Step 2:
Toss the sliced chicken, bell peppers, and onion with olive oil and taco seasoning directly on a sheet pan.

Step 3:
Spread everything out evenly and bake for 20–25 minutes, flipping once halfway through, until the chicken is cooked through and veggies are tender.

Step 4:
Serve immediately in warm tortillas, lettuce wraps, or over a salad. Top with whatever makes you happy (I vote avocado and salsa!).

Sarah’s Tips & Substitutions

  • No chicken? Try sliced steak or shrimp — just reduce the cook time slightly.

  • Meal prep tip: Make a double batch and use leftovers in salads or burrito bowls.

  • Want it spicy? Add chili powder or a few dashes of hot sauce.

  • Sheet pan too crowded? Use two pans to avoid steaming and get that nice roasted char.

Note from Sarah

My picky eaters love this one, and I love that cleanup takes 30 seconds. If you need a win on a weeknight — this is it.
Honestly, there are days I toss everything together while still in my jeans from errands and by the time I’ve changed into sweatpants… dinner’s ready.
