Grilled Shrimp and Pineapple Skewers Recipe

I first made these skewers on a whim when I had shrimp and half a pineapple sitting in the fridge. I added a quick marinade, tossed everything on the grill — and oh wow. The shrimp got smoky and juicy, and the pineapple caramelized into sweet perfection. Now they’re one of my favorite summer meals when I want something fast, colorful, and fresh off the grill.
Ingredients:

1½ lbs large shrimp, peeled and deveined

2 cups fresh pineapple chunks

1 red bell pepper, cut into 1-inch pieces

1 red onion, cut into chunks

Bamboo or metal skewers (if bamboo, soak in water for 30 minutes)
For the marinade:

3 tbsp olive oil

2 tbsp soy sauce or coconut aminos

1 tbsp honey or maple syrup
-
1 tbsp lime juice

2 garlic cloves, minced
-
½ tsp chili flakes (optional, for a little kick)
Instructions:

Make the marinade
In a bowl, whisk together olive oil, soy sauce, honey, lime juice, garlic, and chili flakes. -
Marinate the shrimp
Toss shrimp in the marinade and refrigerate for 20–30 minutes. Meanwhile, prep your pineapple and veggies. -
Assemble the skewers
Thread shrimp, pineapple, pepper, and onion alternately onto skewers. -
Grill
Preheat grill to medium-high. Grill skewers for 2–3 minutes per side, turning once, until shrimp are opaque and slightly charred. -
Serve
Plate with extra lime wedges and fresh cilantro if desired. These pair beautifully with rice, salad, or as a fun BBQ appetizer.
