Grilled Garlic Bread Recipe

I remember the first time I made this grilled garlic bread. It was one of those sticky summer evenings when dinner felt like a chore… until I fired up the grill. The kids were running through the sprinkler, my husband was flipping burgers, and I just wanted one thing to make dinner feel special without any extra work. This garlic bread delivered — smoky, golden, crispy on the edges, soft in the middle, with that buttery garlic hit that makes your eyes close for a second. It’s now my go-to whenever we grill — because it feels like summer in every bite.
Ingredients
-
1 loaf of French or Italian bread, halved lengthwise
-
½ cup unsalted butter, softened
-
3 cloves garlic, finely minced
-
1 tablespoon fresh parsley, chopped (plus more for garnish)
-
½ teaspoon salt
-
Optional: pinch of red pepper flakes or grated Parmesan
Instructions
-
Preheat the grill to medium heat.
-
In a bowl, mix the butter, garlic, parsley, salt, and optional red pepper or Parmesan.
-
Spread the garlic butter mixture evenly over the cut sides of the bread.
-
Place the bread, buttered side up, on the grill over indirect heat. Close the lid.
-
Grill for 3–5 minutes, or until the bread is crispy around the edges and golden in the center.
-
Optional: Move to direct heat for the last 30 seconds for extra char.
-
Remove, slice, sprinkle with fresh parsley, and serve warm.
