Crockpot Hawaiian BBQ Chicken Recipe

30-minute prep chicken recipes easy dinner recipes family dinners gluten free hawaiian-inspired meal prep friendly serves 6 slow cooker sweet and savory

If I could bottle the feeling of summer dinner on the porch with the kids laughing in the background… this Crockpot Hawaiian BBQ Chicken would be it.

It’s sweet, tangy, and falls apart with a fork. The pineapple adds that tropical twist, and the slow cooker does all the work. It’s one of those set-it-and-forget-it meals that smells amazing all day and tastes even better with hardly any effort.

We love it over rice, in lettuce wraps, or piled into sliders for a fun weekend dinner. However you serve it, it’s guaranteed to bring some sunny, feel-good flavor to your table.

Ingredients (serves 4–6):

  • 2 lbs boneless skinless chicken breasts or thighs

  • 1 cup crushed pineapple (with juice)

  • 1 cup BBQ sauce (use your favorite brand)

  • 1/2 small red onion, finely diced (optional)

  • 1 clove garlic, minced

  • Salt and pepper to taste

  • Optional garnish: sliced green onions, sesame seeds

Instructions:

  1. Add to slow cooker: Place chicken in the crockpot. In a bowl, mix BBQ sauce, crushed pineapple, garlic, onion, salt, and pepper. Pour over the chicken.

  2. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and easily shreds.

  3. Shred: Remove chicken and shred with two forks. Return to sauce and stir to coat. Let sit for 10–15 minutes to soak up flavor.

  4. Serve: Spoon over rice, quinoa, or cauliflower rice. Great in buns, wraps, or lettuce cups too!

Sarah’s Tips & Swaps:

  • Make it spicy: Stir in a little sriracha or chopped jalapeño if you like heat.

  • Low sugar tip: Use a no-sugar-added BBQ sauce and pineapple packed in juice, not syrup.

  • No onion? Totally fine — it’s delicious with or without.

  • Make ahead: This freezes great! Just cool completely and freeze in individual portions.

Flavorful Conclusion:

This Hawaiian BBQ Chicken is everything you want in a crockpot dinner: easy, flavorful, and super versatile. It’s a little sweet, a little smoky, and 100% delicious — the kind of meal that makes everyone ask for seconds (and the recipe!).
