This is the drink I reach for when I want to feel refreshed and reset — whether it’s after a walk, a workout, or a long day chasing kids around. The cucumber gives it that clean, cooling vibe while the lime and mint keep things bright and zippy.

It’s just fancy enough to feel like a treat but takes less than 10 minutes to pull together. You can dress it up for a brunch, serve it as a mocktail, or add a splash of gin or vodka for a grown-up twist.

 

Ingredients

  • ½ cucumber, peeled and sliced

  • Juice of 1 lime

  • 1–2 teaspoons honey or agave (optional)

  • 6–8 fresh mint leaves

  • Sparkling water to top

  • Ice

  • Extra cucumber ribbons or mint for garnish

Optional (adult version):

  • 1½ oz gin or vodka per serving

 

Instructions

  1. Muddle cucumber, lime juice, mint, and sweetener in a shaker or jar until juicy and fragrant.

  2. Add ice and shake or stir to chill. Strain into two glasses filled with ice.

  3. Top with sparkling water and garnish with cucumber ribbons or mint sprigs.

  4. Serve immediately and enjoy the chill.

  • No muddler? Use the back of a spoon to gently mash the cucumber and mint.

  • For a spa-style touch, freeze cucumber slices in your ice cubes ahead of time.
